The stand-alone display cabinet in the middle showcases the Laser Goniometer.

Half a century ago, making knives is not quite as simple. This machine is used to measure the sharpened angle of a knife by using the reflection of a laser beam from the knife’s cutting edge. This antique is 40 years old, and now that production has stopped, it has become a collectible that’s extremely valuable.

Wooden Shelf from Local Pine

The timber of this tall wooden shelf was provided by the HK Timberbank. This particular piece was from a tree that was struck when a typhoon hit Hong Kong, and then it was processed and given to local enterprises.

All the shelves are made from one single piece of wood, cut into many layers. If we stack the shelves together, we can see the original piece of log, and it was finished with two branches running through from bottom to top. This shelve was created by Pro-Balance in collaboration with the HK Timberbank, and its name is "Knife and Wood".

New Store Center Back Panel

The back panel in the middle of the ne w store is designed like the place wher e the Masters place their name tags in a Japanese dojo. Over the 10+ years s ince the establishment of Pro-Balance, we have worked with many outstandi ng chefs. In order to honour the chefs for their contributions to the culinary arts, and to highlight each of their uni queness, we shall place their autogra phed knives on display in the store. Not only does each knife come with th e weight its chef once used, but also c arries with it the chef’s profound cooki ng experience; it’s like The Chefs Hall of Fame.

“Kares ansui”

In order to display our brand new Pro- Balance knife series, we have chosen t hese modern light wood grain display cabinets. Cabinets with different heigh ts were purposely placed next to each other, and the showcases were decora ted like a Japanese rock garden “Kares ansui”, where sand is used as water, and mountains are replaced by stones. The sand is raked to represent ripples in water, hence bringing a sense of Zen and harmony.

"Wings"

The display stand in the middle of the store got its inspiration from the Pro-Balance logo, which has an inverted triangle as the main axis. The two sides balancing like airplane wings, soaring freely. The mirror design at the foot of the stand gives the customers the illusions of being high up in the air! The countertop is also specially equipped with a hidden knife rack, which can be slowly raised and lowered when needed. What a sight!
